Following on from the success of our confluence menus of the past, we aim to showcase the regional cuisines of India with a focus on staples from the lesser-known regions and kickstarting it with a menu inspired from Haridwar - A holy city on the banks of the Ganges where vegetarian and plant based cuisine is a way of life. Its origins lie in the philosophy of food that believes that - A man is what he eats, this culinary legacy has influenced the development of a myriad of food cultures including one of the most creative vegetarian cuisines in the world.
An Indian meal is more than a feast of the senses because it carries the impression of geography, local custom, tradition, belief and religious ideology. The result is an exotic blend of taste, texture and form that encompasses a wealth of regional specialities dictated by climate, local produce and culinary tradition.
